If you're story-first and don't care about cosmetic extras, Standard covers you. If the Ultimate items matter to your first playthrough, the $20 gets you all of it on day one rather than unlocking it separately.

Online — What Changes for Grinders

Your GTA 5 Online progress does not transfer. Rockstar hasn't said otherwise, and GTA 5 Online itself launched with no transfer from GTA 4 — the pattern points to starting from scratch, though that's precedent, not confirmation.

Rockstar hasn't published anything about the GTA 6 Online economy, starting cash, or how passive-income properties will work. If you see specific $/hr figures anywhere before launch, they're not real — there's no way to test them until the game is actually out.
